Use It Up

...and I've usually heard "or do without" added to the lines on this WW II poster.
Yesterday I applied this principle to my dinner preparation. At the urging of a friend while eating at the Peking Buffet on Tuesday, I tried some chicken in a peanut sauce.  I KNEW I would like it--and I did! So yesterday, I wanted to give my husband a taste of it.  I put chicken breast in my crock pot and then mixed some peanut butter with some ricotta cheese I had left from preparing a weekend dish. I put the mixture over the chicken breast and, because time was short, turned the heat to high. Four hours later, we enjoyed the meal with Asian cabbage slaw (a leftover).  The slaw recipe is under the Recipe Tag at the top of my blog. We are not picky eaters, and using leftovers creatively is a great adventure for me.  The crock pot is a HUGE help!

  1. I just bought a new, larger crock pot which is still in the box sitting on my kitchen floor! I would never have thought to mix ricotta and peanut butter, but I love both of those ingredients. Did it taste similar to what you had at the restaurant? I too love playing the game to see what I can create from what I have in the house, especially when it's a couple days before payday! LOL! It pains me to waste food in particular...I'm having to learn to prepare smaller sized meals...otherwise we eat up everything and it's usually way too much!

  2. Jacque, It was similar - and (in my opinion) delicious. Next time I'll add some soy sauce, I think. AND I'm even thinking some pineapple! I'm quite adventurous :)

  3. You are blessed to have non-picky eaters to feed! I have to get really creative. My favorite way to use leftovers was to feed them to my laying hens. Now that I don't have chickens, I have to use more imagination. I make soups sometimes. This month we made a determined effort not to do a major grocery trip more than once. I am unsure at this point, but I think we've more than cut our bill in half. Love that poster. Hooray!

    I enjoy my crock pot so much, and when I have leftover chicken, I will either make chicken soup, or chicken salad. We are not picky eaters either. God blessed me with a dear sweet man that is not hard to please.

  6. Very little gets thrown out here, and I really enjoy being creative with what is left. It usually goes into a pot of soup, but ever so often I manage to make two different meals out of one.
    We are not picky eaters here either, and that helps loads!

  7. I've made Asian peanut sauce mixing peanut butter and soy sauce, perhaps with a little minced garlic and a touch of sesame oil. The ricotta cheese sounds like a nice, creamy addition.

  9. Carol, that sounds "yummy"! I thought of adding some soy sauce and the garlic would work well, too. I MAY add a little pineapple next time. Somehow that sounds good, too. (Next time I probably won't have ricotta cheese though--I don't usually have that in my frig...)

    I have only made it for myself once, I usually get it at the China Buffet. Kate is allergic to peanuts but I did one time just melt some peanut butter. I can't remember what I thinned it with. But I just poured it over boneless, skinless chicken chunks mixed with Asian noodles. It was so good! And simple. I just wish that I could remember what I thinned it with!
