I learned this trick from our daughter earlier this week and made them this morning for our breakfast...
Use pancake mix that only requires the addition of water; add some oatmeal and flaxseed meal and water to desired consistency. We had maple syrup on hand. I can't tell you how DELICIOUS these were! AND I found another way to add flaxseed to our diet! (I didn't measure, but personally, I like plenty of oatmeal - I don't usually use "quick" oats - and flaxseed. It adds great texture to the cakes.)

Great idea. I am always looking for ways to add flaxseed to our diets. Sometimes I even put it in my protein shakes. I am sure it is MUCH better in the pancakes.

Flaxseed and oats are always in my pantry, Rebbeca. I substitute flaxseed meal for the wheat bran in my breakfast muffins. I also make a savory oatmeal, which we eat like rice pilaf!

ReplyDeleteWe usually have pancakes for supper as a little treat in our house. On weekends Ray will make them for dinner on a Saturday night sometimes and lately he's been making wheat pancakes, they are delicious!

I haven't had a pancake in a long time. I may give this recipe to Frank as he is the cook here at Secret Haven. I wonder if a few blue berries would taste good with this?

Mmm. I'll have to try this one...I make pancakes every morning for our son for breakfast...He's got so many allergies that I settled on pancakes as the most filling starch years ago...can make the batter without eggs, and he gobbles 'em up!!!
